Ingredients
  

Pasta and Sauce Base

  • 12 oz Pasta of your choice (spaghetti, fettuccine, or penne) Cooked until al dente
  • 2 large Onions, sliced thinly (yellow or sweet) Caramelized for flavor
  • 1 cup Cream For making the sauce
  • 1 cup Parmesan cheese, grated Freshly grated for best flavor
  • 2 tbsp Olive oil For sautéing the onions
  • 1 tbsp Chili oil For added spice
  • 3 cloves Garlic, minced Add to the sauce for flavor
  • to taste Salt and black pepper Adjust according to preference
  • optional Fresh herbs (parsley or basil) For garnish and flavor

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Caramelizing the Onions

  • In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 15-20 minutes, until the onions are golden and caramelized.

Making the Sauce

  • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • Pour in the cream and add grated Parmesan cheese. Stir until the cheese melts and the sauce becomes creamy.

Combining Everything

  • Toss the cooked pasta into the skillet, mixing well to ensure it’s thoroughly coated in the creamy sauce.
  • Drizzle with chili oil, and season with additional salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stovetop over low heat, adding a splash of cream or milk to restore its creamy texture.
