Ingredients

Main Ingredients

  • 1 lb boneless, skinless chicken breasts (cooked and shredded)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 packet ranch seasoning mix (1 oz)
  • 16 oz potato gnocchi (shelf-stable or refrigerated)
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup cream cheese, softened
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika (optional)
  • 2 green onions chopped (for garnish)

Instructions

Preparation

  • Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
  • Stir in chicken broth, heavy cream, and ranch seasoning. Bring to a gentle simmer.
  • Add gnocchi directly into the sauce. Cook for 5–7 minutes, stirring occasionally, until the gnocchi are tender and the sauce begins to thicken.
  • Stir in shredded chicken, cream cheese, cheddar, pepper, and paprika. Cook another 3–4 minutes until everything is creamy and melted together.
  • Taste and adjust seasoning as needed.
  • Garnish with green onions and serve warm for the ultimate comfort food delight.

Notes

Storage: Keep leftovers in the fridge for up to 3 days. Reheat gently with a splash of broth or cream to loosen the sauce. Shortcuts: Use rotisserie chicken for quicker prep. Make it lighter: Swap heavy cream for half-and-half and reduce cheddar to 1 cup. Serving Ideas: Pair with garlic bread or a crisp side salad to balance the richness.
