  • 1 package gnocchi (fresh or frozen)
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled (Greek feta works best for flavor)
  • 1 cup heavy cream Can substitute with half-and-half or plant-based cream for a lighter version.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional for serving)

Preparation

  • Cook the gnocchi according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Add the fresh spinach to the skillet and cook until it’s wilted, stirring occasionally.
  • Pour in the heavy cream and bring the mixture to a simmer, allowing it to thicken slightly.
  • Stir in the crumbled feta cheese, mixing until it melts into the sauce.
  • Add the cooked gnocchi to the skillet, tossing to ensure they are well coated in the creamy sauce. Season with salt and pepper to taste.
  • Serve warm, topped with grated Parmesan cheese, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of cream or water to loosen the sauce. Avoid microwaving to maintain texture.
