  • 1 lb boneless, skinless chicken breasts or thighs, cut into cubes
  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Preparation

  • Heat olive oil or butter in a large pot over medium heat. Add cubed chicken, season lightly with salt and pepper, and cook until golden brown and cooked through. Remove and set aside.
  • In the same pot, add the diced onion and cook for 3 to 4 minutes until softened. Add minced garlic and cook for another minute until fragrant.

Cooking

  • Pour in the chicken broth and bring to a simmer. Stir in the Italian seasoning, crushed red pepper flakes, and chopped sun-dried tomatoes.
  • Lower the heat, add heavy cream and Parmesan cheese, and stir until the cheese melts and the soup turns creamy and smooth.
  • Add the gnocchi to the pot and simmer for 3 to 4 minutes until they rise to the surface and become tender.
  • Stir in the cooked chicken and spinach, allowing the spinach to wilt gently. Taste and adjust seasoning if needed.
  • Ladle the soup into bowls and top with extra Parmesan and chopped basil for a fresh finish.

Notes

Refrigerate leftovers for up to 3 days in an airtight container. Add a splash of broth when reheating to maintain the creamy texture. For a lighter option, use evaporated milk instead of heavy cream. Adding a few tablespoons of white wine to the onions can enhance the flavor. Serve with warm garlic bread, focaccia, or a crisp side salad.
