Ingredients
  

Chicken

  • 2 large boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper
  • 2 tablespoons butter, melted
  • 1 to 2 tablespoons olive oil

Sauce

  • 10.5 oz cream of chicken soup
  • 1.5 cups milk
  • 1 cup sour cream, at room temperature
  • 0.5 teaspoon onion powder
  • 1 oz packet ranch seasoning mix

Preparation

  • Slice the chicken into 2 to 3 thinner pieces. Pound lightly so each piece is about ½ inch thick.
  • Pat the chicken dry. Season both sides with Italian seasoning and salt and pepper. Brush one side with melted butter.

Cooking

  • Heat olive oil in a large skillet over medium high heat. Sear the chicken 4 to 5 minutes per side until golden brown. Remove and set aside.
  • Add the sauce ingredients to the same skillet: cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning. Stir until smooth.
  • Let the sauce bubble gently and reduce for 5 minutes.
  • Return the chicken to the skillet and spoon sauce over the top.
  • Partially cover and let the chicken warm through and absorb the sauce for 10 minutes until creamy and tender.
  • Serve with baked potatoes, rice, or vegetables and spoon extra sauce over the top.

Notes

Make sure to use ranch seasoning mix, not ranch dip mix. The seasoning adds savory zest without tasting like bottled ranch. Add crispy beef bacon on top if you want a smoky crunch. Mix in frozen vegetables while simmering the sauce to make it a full meal. If using smaller chicken breasts, use 3 to 4 pieces instead of 2 large ones.
