Ingredients
  

Main Ingredients

  • 1 to 1.5 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened and cubed
  • 20.5 ounces cream soup (two 10.5-ounce cans of Cream of Onion or Cream of Chicken)
  • 2 tablespoons ranch seasoning mix or 1 packet
  • 6 ounces noodles, cooked

Preparation

  • Trim the chicken breasts and place them in the bottom of a 6-quart slow cooker.
  • Pour both cans of soup over the chicken and sprinkle the ranch seasoning mix evenly on top.
  • Add the cubed cream cheese over the soup mixture.

Cooking

  • Cover and cook on low for about 5 hours. Stir occasionally. As the chicken cooks, begin breaking it apart into smaller pieces.
  • Cook your preferred noodles according to package directions.
  • Either stir the cooked noodles directly into the creamy chicken mixture or serve the chicken mixture ladled over a bowl of noodles.
  • Top with shredded Italian cheese blend and freshly ground black pepper if desired.

Notes

Keep the noodles separate if you plan to store leftovers to prevent them from absorbing too much sauce. Chicken thighs also work well for an extra tender texture. Add steamed broccoli, peas, or spinach at the end for extra vegetables. Use reduced-fat cream cheese if you prefer a lighter dish.
