  • 8 oz penne pasta Can substitute with farfalle or fusilli.
  • 1 lb Cajun sausage, sliced
  • 1 cup heavy cream Can be substituted with half-and-half or coconut milk.
  • 1 cup chicken broth Additional for reheating.
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning Adjust to taste.
  • Salt and pepper to taste
  • Parmesan cheese for serving Freshly grated.
  • Fresh parsley for garnish

Preparation

  • Heat a large pot over medium heat and cook the sliced Cajun sausage until nicely browned.
  • Add chopped onion, diced bell pepper, and minced garlic, sautéing until softened.
  • Sprinkle in the Cajun seasoning and cook for another minute.
  • Gradually add the chicken broth to the pot and bring to a boil.
  • Stir in the penne pasta and cook according to package directions until al dente (about 10-12 minutes).
  • Once cooked, reduce heat and stir in the heavy cream until well combined.
  • Adjust seasoning with salt and pepper to taste.
  • Serve warm, garnished with freshly grated Parmesan cheese and chopped parsley.

Notes

Consider serving with a green salad or garlic bread. Adding red wine and red pepper flakes can elevate the meal.
