  • 8 ounces pasta (fettuccine or linguine)
  • 2 fillets salmon
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Preparation

  • Cook the pasta according to the package instructions. Once done, drain it and set it aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Season the salmon fillets with salt and pepper. Add them to the skillet and cook for about 4-5 minutes on each side, or until they are thoroughly cooked. Remove from the skillet and flake into bite-sized pieces.
  • In the same skillet, add the minced garlic and sauté it for about 1 minute until it becomes fragrant.
  • Pour in the heavy cream and bring it to a gentle simmer. Stir in the fresh spinach and let it wilt in the sauce.
  • Add the cooked pasta and flaked salmon to the skillet, tossing everything together until well combined.
  • Garnish your dish with Parmesan cheese and serve it warm.

Notes

For a healthier twist, substitute whole-grain pasta or swap salmon for shrimp. To elevate the dish, serve in elegant bowls and pair with a crisp green salad or garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheating on the stovetop with a splash of cream or water.
