  • 8 oz pasta (fettuccine or penne) Can use any preferred pasta shape.

Sauce Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Add when the oil is heating to maximize flavor.
  • 1 can 14 oz diced tomatoes Use tomatoes with their juices.
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free version.
  • 1 cup fresh basil, chopped Essential for flavor.
  • to taste Salt and pepper Always taste and adjust seasoning.
  • to serve Parmesan cheese For garnishing.

Instructions
 

Cooking Pasta

  • Cook pasta according to package instructions. Drain and set aside.

Making the Sauce

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add the diced tomatoes (with their juices) to the skillet and let simmer for about 5 minutes.
  • Stir in the heavy cream and heat through, ensuring it doesn’t boil.
  • Add the fresh basil and season with salt and pepper to taste.

Combining

  • Combine the cooked pasta with the creamy sauce and mix well until all the pasta is coated.
  • Serve hot, topped with grated Parmesan cheese.

Notes

Serve in warmed bowls or on a large platter. Garnish with extra chopped basil or a drizzle of olive oil. Store leftovers in an airtight container for up to 3 days. When reheating, gently warm in a skillet with a splash of cream or broth.
