Preparation

  • Set the Instant Pot to 'Sauté' mode and add the olive oil. Wait until it is heated.
  • Add the minced garlic and sauté until it is fragrant—about 30 seconds.
  • Toss in the diced tomatoes, vegetable broth, and pasta. Stir to combine.
  • Close the lid and set the Instant Pot to 'Manual' for 4 minutes.
  • When cooking is complete, perform a quick release of the steam.
  • Stir in the heavy cream, chopped basil, and season with salt and pepper to taste.
  • Serve hot, topped with grated Parmesan cheese if desired.

Notes

Creamy tomato basil pasta can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop, adding a splash of water or broth to loosen the sauce if necessary. For longer storage, freeze for up to 2 months, though the cream may alter in texture upon reheating.
