  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Preparation

  • Cook the pasta according to package instructions and set it aside.
  • In a skillet, heat olive oil over medium heat and cook seasoned chicken until browned, about 5-7 minutes.
  • Add garlic and cherry tomatoes, cooking for an additional 2-3 minutes until the tomatoes soften.
  • Stir in spinach and cook until it wilts, approximately 1 minute.
  • Pour in heavy cream and bring it to a gentle simmer, mixing in Parmesan cheese until combined.
  • Toss in the cooked pasta, ensuring it is fully coated with the sauce.
  • Taste and adjust seasoning with salt and pepper, if necessary.
  • Serve hot, garnished with fresh basil.

Notes

For storage, keep leftovers in an airtight container in the refrigerator for up to 3-4 days. Freeze in containers for 2-3 months. Reheat on the stovetop over low heat, adding a splash of cream or milk for a creamy texture.
