  • 4 pieces cod fillets About 1.5 pounds total
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley Finely chopped
  • 1 piece lemon Zest and juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper To taste
  • Cooking spray or extra olive oil For greasing

Preparation

  • Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper or a lightly greased silicone baking mat.
  • Pat the cod fillets dry using paper towels. Season generously with salt and pepper.
  • In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, parsley, lemon zest, garlic powder, onion powder, and paprika.
  • Drizzle olive oil over the breadcrumb mixture and stir until crumbly and well mixed.
  • Press each cod fillet into the breadcrumb blend, coating each side evenly.
  • Arrange the cod on the prepared baking sheet, leaving space between each piece.

Cooking

  • Bake for 15-20 minutes, or until the cod flakes easily with a fork and the coating is golden brown.
  • Just before serving, squeeze fresh lemon juice over the top.

Notes

For leftovers, store in an airtight container in the fridge for about 2 days. Reheat in a toaster oven at 350°F (175°C) for 10 minutes. Avoid microwaving to keep the coating crispy. Consider adding cayenne pepper for heat or experimenting with different herbs and cheeses.
