  • 2 pounds baby potatoes You can use larger potatoes, cut into smaller pieces for even cooking.
  • 4 tablespoons unsalted butter Can be substituted with olive oil for a dairy-free alternative.
  • 4 cloves garlic, minced Adjust according to taste.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped Optional for garnish.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the baby potatoes thoroughly and cut them in half.
  • In a large bowl, melt the butter and stir in the minced garlic, salt, and pepper.
  • Add the halved potatoes to the bowl and toss until they are well coated in the garlic butter mixture.
  • Spread the potatoes in a single layer on a baking sheet.
  • Bake for 25-30 minutes, flipping halfway through, until they’re golden and crispy.
  • Once out of the oven, sprinkle with fresh parsley if desired, and serve hot.

Notes

For perfectly crispy potatoes, ensure they are well spaced on the baking sheet. Consider leaving the skins on for extra crunch. Mix in different herbs or parmesan cheese for added flavor.
