  • 1 can chickpeas, drained and rinsed You can also use dried chickpeas if pre-cooked.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste pinch sea salt

Optional variations

  • 1 pinch cayenne pepper Add for a spicy kick.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Drain and rinse your chickpeas well to remove any canning liquid.
  • Spread the chickpeas on a clean kitchen towel or paper towels and gently pat them dry.
  • In a bowl, toss the dried chickpeas with olive oil, garlic powder, smoked paprika, oregano, and sea salt until well-coated.
  • Spread the chickpeas on a baking sheet in a single layer to ensure even roasting.

Cooking

  • Roast in the oven for about 25-30 minutes, stirring halfway through, until they’re golden brown and crispy.
  • Allow to cool slightly before serving.

Notes

To achieve extra crispiness, ensure chickpeas are thoroughly dried before seasoning. Letting them air dry for an extra 30 minutes can also help. Store leftovers in an airtight container for 3-5 days, and reheat for a few minutes to regain crispiness.
