  • 2 pounds boneless, skinless chicken breasts thighs also work
  • 1 ounce ranch seasoning 1 packet or homemade
  • ¾ cup low-sodium chicken broth
  • 8 ounces cream cheese, cubed

Preparation

  • Season the chicken breasts with half of the ranch seasoning packet and place them aside.
  • Add the chicken broth and the remaining ranch seasoning to the slow cooker. Whisk until well combined.
  • Place the seasoned chicken breasts into the slow cooker. Cover and cook on HIGH for 2 to 3 hours or LOW for 3 to 6 hours, until the chicken is tender.
  • Add the cream cheese cubes and stir until melted and fully incorporated into the sauce.
  • Serve warm over white rice or mashed potatoes for a creamy, comforting dinner.

Notes

Use chicken thighs for extra tenderness and richer flavor. Add steamed broccoli or green beans for a complete meal. Stir in shredded cheddar for additional cheesiness. Refrigerate leftovers for up to 4 days.
