  • 6 large large eggs
  • 1 cup milk Dairy-free milk can be used for a lactose-free version.
  • 1 cup shredded cheese (like cheddar or Swiss) Feel free to vary the cheese type.
  • 1 cup chopped vegetables (spinach, bell peppers, onions) Any vegetables can be used based on preference or season.
  • Salt and pepper to taste
  • 1 tablespoon olive oil Optional, for sautéing vegetables.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the eggs and milk until well combined.
  • Stir in your choice of cheese, chopped vegetables, salt, and pepper.
  • If desired, heat olive oil in a skillet and sauté the vegetables lightly before adding them to the egg mixture.
  • Grease a pie dish with cooking spray or oil, then pour the egg mixture into it.
  • Bake for 30-40 minutes, or until the quiche is set and lightly golden on top.
  • Allow the quiche to cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months. Reheat slices in the microwave or oven.
