  • 2 cups pecans (halved and toasted) Can substitute with almonds or other nuts.
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 10 ounces chocolate (semi-sweet or milk, your choice) Dark chocolate can also be used.
  • sea salt (optional) To sprinkle on top for added flavor.

Preparation

  • Preheat your oven to 350°F (175°C). Spread out the pecan halves on a baking sheet and toast for about 8-10 minutes until fragrant. Set aside to cool.
  • In a medium saucepan, mix sugar, butter, and corn syrup. Cook over medium heat while stirring frequently until bubbling and golden, around 5 minutes. Remove from heat and let it thicken slightly.
  • On a parchment-lined baking sheet, place small clusters of pecans (about 4 halves per cluster) and drizzle caramel over them generously.
  • In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring in between until smooth.
  • Spoon the melted chocolate over the caramel-coated pecans to cover them entirely. Sprinkle a pinch of sea salt on top.
  • Allow the turtles to cool at room temperature until the chocolate hardens. Store them in an airtight container.

Notes

Store in an airtight container for up to a week at room temperature or refrigerate for up to two weeks. Freezing is also an option for up to three months.
