Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup milk Can be substituted with plant-based milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup mixed dried fruits Such as raisins, cranberries, and apricots
  • 1/2 cup chopped nuts Walnuts or pecans work great
  • to taste powdered sugar for dusting Optional, but recommended!

Preparation

  • Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  • In a separate bowl, whisk the melted butter, milk, eggs, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry mixture and stir gently until just combined. Don’t over-mix!
  • Fold in the mixed dried fruits and chopped nuts carefully to keep the batter light and fluffy.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

Baking

  • Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the muffins in the tin for a few minutes before transferring them to a wire rack.
  • Dust with powdered sugar just before serving to add a special touch.

Notes

These muffins are delightful on their own, but you can elevate your serving game by serving them warm with a drizzle of honey or a dollop of cream cheese spread. They pair well with spiced tea or hot chocolate during holiday festivities. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
