  • 2 stalks Green onions, sliced

  • 1 cup Dumplings (frozen or homemade)
  • 1 cup Tofu (optional, for added protein)

Preparation

  • In a large pot, warm some oil over medium heat.
  • Add minced ginger and chopped garlic, stirring until fragrant.
  • Toss in the chopped carrots and mushrooms, cooking until they soften.
  • Pour in the vegetable stock and soy sauce, bringing the mixture to a gentle simmer.
  • Add the dumplings and noodles, cooking according to package instructions (generally about 5-7 minutes).
  • Just before serving, stir in the fresh spinach and sliced green onions.
  • Adjust the seasoning to taste, serving hot.

Notes

Serve topped with fresh green onions. For added flavor, consider a splash of chili oil or sesame oil. Pairs well with a light salad or crispy spring rolls.
