  • Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, water, and red pepper flakes until smooth. Set aside.
  • Cook the turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook for 5 to 6 minutes, breaking it apart with a spoon until browned and cooked through. Drain excess fat if needed.
  • Add aromatics: Stir in minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
  • Add vegetables: Toss in the sliced onion and bell peppers. Stir-fry for 3 to 4 minutes until they’re tender but still crisp and colorful.
  • Add the sauce: Pour the prepared sauce over the mixture. Stir well and cook for 2 to 3 minutes until the sauce thickens and coats everything evenly.
  • Serve: Remove from heat and top with green onions, sesame seeds, or fresh herbs. Serve over rice, quinoa, noodles, or in lettuce wraps.
