Ingredients
  

Pasta Salad Base

  • 1 package Tortellini (fresh or frozen) Use according to package instructions.
  • 1 cup Pesto sauce Store-bought or homemade.
  • 1 cup Cherry tomatoes, halved
  • 2 cups Fresh spinach, chopped
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper

Garnish

  • 1/4 cup Grated Parmesan cheese For topping before serving.

Preparation

  • Cook the tortellini according to package instructions, then drain and let them cool.
  • In a large bowl, mix the cooked tortellini with pesto, cherry tomatoes, and spinach.
  • Drizzle with olive oil, then season with salt and pepper to taste.
  • Toss everything until well combined and coated in the pesto.
  • Serve this delightful salad chilled or at room temperature, topped with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For fresh taste, add spinach and Parmesan just before serving. Freezing is not recommended.
