Ingredients
  

For the Noodles

  • 2 large large russet potatoes (about 1 lb), peeled
  • ¾ cup potato starch (or cornstarch substitute)
  • ½ tsp salt
  • 2 tbsp neutral oil (canola or avocado oil)

For the Sauce

  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • ¼ cup cooked beef bacon, finely chopped (pork-free)
  • 2 tbsp green onions, thinly sliced
  • ½ tsp crushed chili flakes (optional)
  • Freshly cracked black pepper, to taste

Instructions
 

Preparation

  • Cut the peeled potatoes into chunks and boil them in salted water for about 12–15 minutes until soft and fork-tender.
  • Drain the potatoes completely, then mash them until smooth. Let the mashed potatoes cool slightly.
  • Add potato starch and salt to the mashed potatoes. Mix and knead until a soft dough forms. If it feels sticky, add a bit more starch.
  • Roll the dough into long ropes and cut into noodle-like pieces. Dust lightly with starch to prevent sticking.

Cooking

  • Drop the noodles into boiling water. Once they float to the surface (about 2–3 minutes), they’re done. Drain and drizzle with a small amount of oil.
  • Heat oil in a skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
  • Stir in soy sauce, sesame oil, and chili flakes.
  • Add the cooked potato noodles and beef bacon to the skillet. Toss everything together until the noodles are evenly coated and lightly golden.
  • Garnish with green onions and a dash of black pepper. Serve hot and enjoy the simple, rich flavors.

Notes

Storage: Keep leftovers in the refrigerator for up to 2 days. Reheat in a skillet with a touch of oil to restore the texture. Variations: Add sautéed vegetables, shredded chicken, or tofu to make it a complete meal. Make Ahead: Prepare the noodles up to a day in advance and store them uncooked in the fridge. Flavor Boost: Add a splash of rice vinegar or chili oil for extra depth and spice.
