  • 2 large large sweet potatoes, peeled and cut into thin fries
  • 1.5 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 1 tablespoon cornstarch (optional for extra crispiness) Optional

Preparation

  • Preheat the oven: Set the oven to 425°F (220°C). Line a baking sheet with parchment paper to keep the fries from sticking.
  • Cut and soak the potatoes: Slice sweet potatoes into evenly sized fries, about ¼ inch thick. For crispier results, soak them in cold water for 20–30 minutes to remove excess starch. Pat completely dry before seasoning.
  • Season the fries: Place the fries in a large bowl. Add olive oil, salt, smoked paprika, garlic powder, and black pepper. Toss well to coat evenly. For extra crunch, sprinkle in cornstarch and toss again.

Cooking

  • Bake the fries: Spread fries out in a single layer on the baking sheet, ensuring they don’t overlap. Bake for 15 minutes, flip, then bake another 10–12 minutes until crispy and golden brown on the edges.
  • Serve hot: Let them cool for a few minutes to crisp up further. Serve immediately with your favorite dip or sauce such as chipotle mayo, ketchup, or garlic aioli.

Notes

Pro Tips: Don’t overcrowd the pan. Air fryer version: Cook at 400°F (200°C) for 15–18 minutes, shaking halfway through. For dessert-style fries, skip the paprika and add cinnamon and honey after baking. Store leftovers in an airtight container in the fridge for up to 3 days.
