  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup granulated sugar

Dry Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg Freshly grated for better flavor
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Optional Ingredients

  • 1 cup chopped walnuts or pecans Optional
  • 1/2 cup raisins Optional
  • 1 batch cream cheese frosting For topping

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a large mixing bowl, combine the grated carrots, granulated sugar, brown sugar, vegetable oil, applesauce, and eggs. Mix well until thoroughly blended.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually fold the dry mixture into the wet mixture, stirring gently until just combined. If using nuts or raisins, mix them in at this stage.
  • Pour the batter into the prepared pan and spread it evenly.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool completely before generously spreading cream cheese frosting on top.

Notes

For the ultimate fluffy texture, avoid over-mixing the batter. Allow the bars to sit for a day before serving to intensify the taste.
