  • 8 oz pasta (fettuccine or linguine)
  • 2 large onions, thinly sliced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Freshly grated is recommended for best melting
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, melt the butter over medium heat.
  • Add the sliced onions and cook, stirring occasionally, until they turn caramelized and golden brown, about 20-25 minutes.
  • Once the onions are caramelized, lower the heat and pour in the heavy cream, stirring to combine.
  • Add the grated Parmesan cheese and mix until it melts and forms a creamy sauce. Season with salt and pepper to taste.
  • Toss the cooked pasta into the skillet and coat it in the sauce.
  • Serve warm, garnished with chopped parsley if desired.

Notes

This pasta pairs well with a crisp green salad or garlic bread. Store leftovers in an airtight container for up to 3 days and reheat gently with a splash of cream.
