Pasta and Base

  • 8 oz 8 oz pasta (any kind you prefer)
  • 2 tablespoons 2 tablespoons butter
  • 2 large 2 large onions, sliced
  • 2 cloves 2 cloves garlic, minced
  • 1 cup 1 cup beef or vegetable broth Choose based on personal preference
  • 1 cup 1 cup heavy cream Can substitute with half-and-half for a lighter version
  • 1 cup 1 cup grated cheese (Gruyere or Swiss work best)
  • to taste Salt and pepper to taste
  • to garnish Fresh thyme for garnish

Preparation

  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large pot, melt the butter over medium heat. Add the sliced onions and cook until they’re caramelized (around 15-20 minutes).
  • Stir in the minced garlic and sauté for another minute.
  • Pour in the broth and allow it to simmer.
  • Add the heavy cream and cheese, stirring until the cheese melts and the sauce is smooth.
  • Toss the cooked pasta in the pot, ensuring it’s well coated with the sauce.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh thyme for an aromatic finish.

Notes

Serve the pasta in shallow bowls to showcase the creamy sauce. Pair with a light green salad or crusty bread. For a festive touch, sprinkle crispy fried onions on top.
