  • 4 cups fresh strawberries, sliced
  • 3/4 cup sugar (adjust to taste)
  • 1 tablespoon lemon juice (optional, for zest)

For the batter

  • 1 cup all-purpose flour (divided) 1 tablespoon reserved for coating strawberries
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup melted butter (1 stick)
  • 3/4 cup milk (whole or low-fat)
  • 1 teaspoon vanilla extract (optional, for flavor)

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  • In a large bowl, combine the sliced strawberries with 1/4 cup of sugar, lemon juice, and 1 tablespoon of flour. Let this mixture sit for about 10 minutes to release its juices.
  • In a separate bowl, whisk together the remaining flour, baking powder, salt, and 1/2 cup sugar.
  • Pour in the melted butter and milk, stirring until everything is smooth and well-blended.

Baking

  • Pour the batter into the greased baking dish and then spoon the strawberry mixture evenly over the top.
  • Bake for 35-40 minutes, or until the cobbler is golden brown and the edges are bubbling.
  • Allow it to cool for about 15 minutes before serving.

Notes

To serve, enjoy warm with a scoop of vanilla ice cream or drizzle some fresh cream for a lighter option. Store leftovers in an airtight container in the refrigerator for about 3-4 days.
