  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil For sautéing vegetables.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until fully combined.
  • Heat the olive oil in a skillet over medium heat. Add your diced vegetables and sauté until softened, about 5-7 minutes.
  • Grease a baking dish and spread the sautéed vegetables evenly at the bottom.
  • Pour the egg mixture over the sautéed vegetables, ensuring an even distribution.
  • Top with the shredded cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the frittata is set and golden brown on top.
  • Allow the casserole to cool slightly before slicing and serving.

Notes

Serve with mixed greens, toasted bread, or add sour cream/salsa for a brunch vibe. Store leftovers in the fridge for up to 4 days.
