  • 1/2 cup creamy peanut butter (unsweetened, natural preferred) Natural peanut butter with oil separation should be stirred well before measuring.
  • 2 tbsp maple syrup (or honey, adjust to taste) Sweetener can be adjusted to personal preference.
  • 1/2 tsp vanilla extract (pure) Adds flavor to the base.

Optional Mix-ins & Toppings

  • 1/4 cup mini chocolate chips Optional, for added sweetness.
  • 1 tbsp chopped peanuts For topping.
  • 1 tsp flaky sea salt Enhances peanut flavor.

Preparation

  • In a medium bowl, combine Greek yogurt, peanut butter, maple syrup, and vanilla extract. Whisk until smooth.
  • If using, fold in mini chocolate chips gently.

Portioning

  • Line a baking sheet with parchment paper or use a silicone mold.
  • Using a small cookie scoop or rounded teaspoon, portion the mixture into 1-tablespoon mounds.

Topping and Freezing

  • Immediately sprinkle each mound with chopped peanuts and sea salt, pressing gently.
  • Freeze uncovered until solid, about 1.5 to 2 hours.

Storage

  • Transfer frozen bites to an airtight container or freezer bag, with parchment between layers to prevent sticking.

Notes

Can be prepared and frozen up to 2 weeks in advance. Let bites sit at room temperature for 2-3 minutes before serving for best texture.
