  • 2 cups frozen peach slices (about 1 large peach worth once frozen)
  • 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
  • 1/4 cup honey or maple syrup (adjust to taste)
  • 1 cup ice cubes
  • 1/2 cup cold water (plus more if needed for blending)

Instructions
 

Preparation

  • Juice the lemons until you have about 1/2 cup of fresh lemon juice. Strain if you prefer no pulp.
  • Add the frozen peaches, lemon juice, honey (or syrup), ice cubes, and cold water to a high-speed blender.

Blending

  • Blend on high until smooth and slushy, pausing to scrape the sides if needed. This usually takes 30–60 seconds.
  • Check the texture. If it's too thick, add water 1–2 tablespoons at a time and blend again.
  • Taste and adjust: add more sweetener for sweetness or a splash more lemon juice for brightness.

Serving

  • Pour into chilled glasses. Garnish with lemon slices, peach wedges, and mint leaves if desired. Serve immediately.

Notes

Best consumed fresh; texture and brightness are ideal immediately after blending. For a thinner drink, use extra water or a splash of cold sparkling water. To make it vegan, use maple syrup instead of honey.
