Ingredients
  

For the Yogurt Bites

  • 1 cup thick Greek yogurt or coconut yogurt Use extra-thick yogurt for best texture.
  • 3 tablespoons cashew butter or almond butter
  • 3 tablespoons maple syrup Add an additional tablespoon if you prefer sweeter bites.
  • 3 tablespoons protein powder Optional; only use if you love the flavor.
  • 1 teaspoon vanilla extract
  • 1 good pinch sea salt Maldon or Celtic recommended.
  • handful cacao nibs Optional but great for crunch + antioxidants.

For the Chocolate Coating

  • 3/4 cup chocolate chips or chopped chocolate
  • 1/2 tablespoon coconut oil

Instructions
 

Preparation

  • In a large bowl, whisk together the yogurt, nut butter, maple syrup, protein powder (if using), vanilla extract, sea salt, and optional cacao nibs until thick, smooth, and creamy. Adjust sweetness to taste.
  • Divide the yogurt mixture into your mold, filling each cavity about 2/3 full.

Melting Chocolate

  • In a small bowl, add the chocolate and coconut oil. Melt in 30-second microwave intervals (stirring between each) or use the double-boiler method until silky smooth.

Assembly

  • Spoon or pour melted chocolate over each yogurt portion, filling the remaining 1/3 of each cavity.
  • Freeze the bites for 3–4 hours, or until completely solid.

Serving

  • Remove from molds and store in an airtight container in the freezer for up to two months. Let the bites thaw for 2–3 minutes before eating for the creamiest texture.

Notes

Add extras like chopped nuts, berries, or shredded coconut for flavor variety. Use silicone molds for the easiest release and clean edges.
