Ingredients
  

Steaks and Seasoning

  • 4 pieces beef sirloin or ribeye steaks (about 1-inch thick, 6–8 oz each)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)

Cooking Ingredients

  • 3 tbsp unsalted butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh rosemary or thyme
  • 2 tbsp olive oil

For Serving

  • Lemon wedges for serving

Preparation

  • Pat steaks dry with paper towels. Season both sides with salt, pepper, and paprika.

Cooking

  • Place skillet over medium-high heat and add olive oil until shimmering.
  • Add steaks to the pan and cook 3–4 minutes per side for medium-rare, pressing gently for even searing.
  • Lower heat to medium. Add butter, garlic, and rosemary. Tilt the pan slightly and spoon the melted butter over the steaks for 1–2 minutes.

Finishing

  • Transfer to a plate and let rest 5 minutes before slicing.
  • Top with pan juices and a squeeze of lemon.

Notes

Use a meat thermometer — 135°F for medium-rare, 145°F for medium. Cook in batches if needed to get a perfect golden sear. Season steaks ahead of time for extra flavor. Pair with garlic mashed potatoes, roasted veggies, or a fresh salad.
