  • 4 pieces boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth Use low-sodium broth for less salt
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced Can substitute with garlic powder if preferred
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes Optional for added heat
  • 2 tablespoons olive oil
  • to taste Fresh parsley for garnish Optional

Instructions
 

Preparation

  • Wash and halve the baby potatoes, then set them aside.
  • Coat the chicken breasts evenly with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using).

Cooking

  • Place the halved potatoes at the bottom of the crockpot.
  • Lay the seasoned chicken breasts on top.
  • Pour the chicken broth over the chicken and potatoes.
  • Spread the minced garlic evenly over everything, and sprinkle the grated Parmesan cheese generously on top.
  • Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  • Carefully remove the chicken and potatoes from the crockpot, spooning the remaining sauce over the top for added flavor.

Garnishing

  • Chop fresh parsley and sprinkle over the dish before serving.

Notes

For extra flavor, consider searing the chicken before placing it in the crockpot. You can also add carrots, green beans, or bell peppers for more nutrition and flavor.
