For the filling

  • 1 cup mixed fresh vegetables (like bell peppers, spinach, onions, or mushrooms)
  • 4 large eggs
  • 1 cup milk (dairy or plant-based)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil or butter over medium heat. Add your mixed vegetables and sauté until they’re tender.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until combined.
  • Spread the sautéed vegetables evenly over the pie crust.
  • Pour the egg mixture over the vegetables, ensuring everything is well-distributed. Then, sprinkle the shredded cheese on top.
  • Bake for 30-35 minutes, or until the quiche is set and golden.
  • Allow the quiche to cool for a few minutes before slicing and serving.

Notes

Feel free to experiment with different seasonal vegetables or even incorporate some herbs for an extra flavor boost. Store leftovers in an airtight container in the fridge for up to three days or freeze for two months.
