Ingredients
  

Pasta and Vegetables

  • 1 package Cheese-filled tortellini Cook according to package instructions
  • 2 cups Fresh bell peppers (any color), chopped
  • 1 cup Cucumbers, diced
  • 1 cup Cherry tomatoes, halved

Cheese and Herbs

  • 1 cup Feta cheese, crumbled
  • 1 cup Fresh parsley, chopped
  • 1 tbsp Fresh oregano, chopped

Dressing

  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Red wine vinegar
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions
 

Preparation

  • Cook the tortellini according to package instructions; drain and set aside.
  • In a large bowl, combine chopped fresh vegetables and herbs.
  • Add the cooked tortellini and feta cheese to the bowl.
  • Drizzle with your homemade Greek dressing and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

For best results, ensure tortellini is cooked al dente for a chewy texture. Feel free to experiment with different herbs and let the salad sit at room temperature for a few minutes before serving to enhance flavors.
