Ingredients
  

Wet Ingredients

  • 3 pieces ripe bananas, mashed Ensure bananas are really ripe for best flavor.
  • 1 cup Greek yogurt Can substitute with regular plain yogurt.
  • 1/3 cup honey or maple syrup Use either, based on taste preference.
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour Can substitute half with whole wheat flour for a healthier option.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Can add a pinch of nutmeg for more spice.

Mix-ins

  • 1/2 cup chopped nuts or chocolate chips (optional) Enhance flavor and texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mix together the mashed bananas, Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until blended.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in nuts or chocolate chips.

Baking

  • Pour the batter into the prepared loaf pan and smooth out the top.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow it to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

This bread can be served warm with butter or cream cheese. It can also function as a base for a breakfast sandwich.
