Ingredients
  

Yogurt Mixture

  • 1 cup Greek yogurt
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/3 cup peanuts

Chocolate Layer

  • 1⅓ cups chocolate chips
  • 2 teaspoons coconut oil
  • Flaky sea salt

Instructions
 

Preparation

  • In a large bowl, mix together the Greek yogurt, nut butter, and honey until fully incorporated.
  • Line a baking sheet with parchment paper.
  • Use a cookie scoop to portion about 3 tablespoons of the yogurt mixture onto the sheet, creating round cookie-like shapes.
  • Smooth the tops with the back of the scoop or a spoon.
  • Place 5 peanuts on top of each yogurt cookie.
  • Freeze for 2 hours or until solid.

Chocolate Coating

  • Melt the chocolate and coconut oil in a small pot over low heat, stirring constantly until smooth.
  • Working quickly, dip each frozen yogurt cookie into the melted chocolate—or drizzle chocolate on top if preferred.
  • Sprinkle each with flaky sea salt and return to the freezer for 20 minutes to set.

Storage

  • Store the finished bites in an airtight container in the freezer.

Notes

Use nonfat Greek yogurt for fewer calories and a higher protein boost. Swap peanuts for almonds or cashews for variety. For lower sugar, reduce the honey and use dark chocolate chips. Let bites thaw for 3–5 minutes before eating for the creamiest texture.
