Burrito Filling

  • 1 lb ground beef Can substitute with black beans for a vegetarian option.
  • 1 packet taco seasoning Use homemade if preferred.
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas Can substitute with corn tortillas for gluten-free.
  • to taste butter or oil for grilling

Instructions
 

Cooking the Beef

  • Heat a skillet over medium heat and brown the ground beef, ensuring to drain any excess grease.
  • Stir in the taco seasoning along with a splash of water and let it simmer for about 5 minutes.

Preparing the Tortillas

  • Gently heat the tortillas on a dry skillet or pop them in the microwave to make them pliable.

Assembling the Burrito

  • Lay one tortilla flat and layer it with cooked rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream.
  • Sprinkle a generous amount of both shredded cheddar and mozzarella on top.

Grilling the Burrito

  • Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese.
  • Place the burrito seam-side down and grill it until the cheese melts and forms a crispy crust.
  • Flip it gently and repeat on the other side.

Notes

Let the burrito cool completely before storing. Wrap it tightly and refrigerate for about 3 days. For optimal freshness, double-wrap before freezing. Reheat on low heat in a skillet.
