Ingredients
  

Protein and Beans

  • 1 lb ground beef (or ground turkey/chicken for lighter option)
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup refried beans

Filling

  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • ½ cup nacho cheese sauce (optional for extra gooeyness) Use if you like a creamier burrito

Wrap and Grill

  • 4 large flour tortillas
  • 2 tbsp butter (for grilling)

Preparation

  • In a skillet, cook ground beef with taco seasoning until browned and fully cooked. Drain excess fat.
  • Warm tortillas in a skillet or microwave until pliable.
  • Spread refried beans and rice in the center of each tortilla. Top with seasoned beef, shredded cheese, sour cream, and nacho cheese if using.
  • Fold burritos tightly, tucking in the sides as you roll.

Cooking

  • Heat a skillet over medium heat with ½ tbsp butter. Sprinkle shredded cheese directly onto the skillet in a thin layer, then place burrito seam-side down over the cheese. Cook until the cheese melts and forms a crispy golden crust.
  • Flip burrito and toast the other side lightly until golden. Repeat with remaining burritos.

Notes

Pro Tips: Make ahead by prepping all fillings and assembling later. For a healthier version, use whole-wheat tortillas, ground turkey, and Greek yogurt instead of sour cream. For extra crunch, add crushed tortilla chips or Doritos inside before rolling. Serve with salsa, guacamole, or a fresh green salad for balance.
