Ingredients
  

For the Marinade

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce Can substitute with gluten-free soy sauce if needed
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Fresh herbs can be used for added flavor
  • Salt and pepper to taste

For the Chicken

  • 4 pieces chicken breasts

Preparation

  • In a bowl, combine the olive oil, lemon juice, soy sauce, minced garlic, oregano, salt, and pepper. Mix well.
  • Place the chicken breasts in a plastic bag or shallow dish, then pour the marinade over them. Ensure the chicken is fully coated.
  • Marinate in the refrigerator for at least 30 minutes and up to 2 hours for maximum flavor.

Cooking

  • Preheat your grill to medium heat.
  • Take the chicken out of the marinade and grill for 6-7 minutes on each side, or until fully cooked.
  • Allow the chicken to rest for a few minutes before slicing and serving.

Notes

For optimal results, use a meat thermometer to check that chicken reaches a safe internal temperature of 165°F. Letting the chicken rest will help retain its juiciness.
