  • 1 cup Sweet bell peppers Diced.
  • 1/2 cup Red onions Sliced.
  • 1 cup Cucumber Diced.
  • 8 oz Deli meats (salami or turkey) Sliced.
  • 1 cup Shredded cheese (cheddar or provolone)

Dressing

  • 1/4 cup Olive oil
  • 2 tbsp Vinegar (your choice) Red wine, balsamic, or apple cider recommended.

Preparation

  • Wash and chop the leafy greens and other veggies into bite-sized pieces.
  • In a large bowl, combine the greens, bell peppers, red onions, and cucumber, tossing them to mix well.
  • Slice your chosen deli meats and sprinkle them over the salad, followed by a generous layer of shredded cheese.

Dressing

  • In a small bowl, whisk together olive oil, your selected vinegar, salt, and pepper to taste.
  • Pour the dressing over the salad and toss everything until well-coated.

Notes

For best results, use the freshest vegetables and consider adding extras like olives or avocado. Store leftovers in the fridge without dressing for 1-2 days.
