  • 3 tablespoons olive oil Don't skimp on oil for a perfect crunch.
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the potatoes into halves or quarters depending on their size.
  • In a large bowl, combine the olive oil, dried rosemary, dried thyme, minced garlic, salt, and pepper.
  • Add the potatoes to the mixture and toss until thoroughly coated.
  • Spread the potatoes in a single layer on a baking sheet, ensuring they aren't crowded.
  • Roast in the preheated oven for 25–30 minutes, flipping halfway through until crispy and golden brown.
  • Garnish with fresh herbs if desired, and serve warm.

Notes

For variations, toss with lemon zest, balsamic vinegar, or crushed red pepper flakes. Store leftovers in an airtight container for up to three days in the refrigerator.
