  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium russet potatoes, thinly sliced
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions
 

Cooking the Beef Mixture

  • In a skillet, heat olive oil over medium heat. Add ground beef and onion, cooking until beef is browned and onion is soft (6–7 minutes). Stir in garlic and cook for 1 minute.

Seasoning

  • Add salt, pepper, and paprika. Remove from heat.

Preparing the Sauce

  • In a bowl, whisk together cream of mushroom soup and milk until smooth.

Layering the Casserole

  • Grease the baking dish. Layer half of the potatoes on the bottom, followed by half of the beef mixture, half of the corn, and a sprinkle of cheese. Repeat with remaining ingredients, ending with sauce and cheese.

Baking

  • Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake an additional 15 minutes until potatoes are tender and cheese is golden.

Serving

  • Garnish with fresh parsley and serve hot.
