  • 2-3 pounds Fresh tomatoes Any variety will do
  • 3-4 cloves Garlic, minced Adjust based on taste
  • 3 tablespoons Olive oil
  • to taste Salt and pepper

  • to taste Dried oregano
  • optional Red pepper flakes For heat

Preparation

  • Wash the fresh tomatoes and remove the stems. Peeling is optional but recommended for a smoother sauce.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic to the skillet and sauté for about a minute or until fragrant, being careful not to burn it.
  • Toss in the chopped tomatoes, salt, pepper, basil, oregano, and red pepper flakes (if using).
  • Allow the mixture to cook for about 20-30 minutes, stirring occasionally until the tomatoes break down and meld with the other flavors.
  • Taste the marinara and adjust the seasoning if necessary.

Serving

  • Serve over zoodles for a low-carb option or with meatballs for a classic dish.

Notes

Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat gently on the stove.
