Ingredients
  

Chicken and Rice

  • 1 lb boneless, skinless chicken thighs or breasts Feel free to substitute chicken breasts for thighs.
  • 1 cup long-grain rice White or brown rice will work.
  • 2 cups chicken broth Use low-sodium if desired.
  • ½ cup BBQ sauce Your favorite brand.
  • ¼ cup honey Adds sweetness to the dish.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste Salt and pepper

Vegetables and Garnish

  • 1 cup mixed vegetables Frozen or fresh.
  • to taste Chopped green onions or parsley For garnish.

Instructions
 

Preparation

  • Heat a large skillet or deep pan over medium heat.
  • Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Drizzle a little oil into the heated pan and sear the chicken for about 3-4 minutes on each side or until golden brown. Once done, remove the chicken and set it aside.
  • In that same pan, add the uncooked rice and toast it for 1-2 minutes, stirring frequently to prevent burning.

Cooking

  • Pour in the chicken broth, then stir in the BBQ sauce and honey until combined.
  • Nestle the seared chicken back into the pan, ensuring it’s surrounded by the rice mixture.
  • Bring everything to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15 minutes.
  • After the time is up, sprinkle the mixed vegetables over the rice mixture. Cover it again and continue cooking for an additional 5 minutes, or until the rice is tender and the chicken has reached an internal temperature of 165°F (74°C).
  • Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork.

Serving

  • Garnish with chopped green onions or parsley, and serve hot!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop with a splash of chicken broth or water to prevent drying out. Freezing is also an option, though the texture may change slightly.
