Ingredients
  

For the chicken

  • 4 pieces boneless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper

For the mango salsa

  • 1 piece ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 piece jalapeño, minced (optional) For that extra spice
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice (for the salsa)

Instructions
 

Preparation

  • Mix honey, lime juice, olive oil, salt, and pepper in a bowl to create a marinade.
  • Place the chicken breasts in the marinade and let soak for at least 30 minutes.

Cooking

  • Preheat your grill or oven to medium-high heat.
  • Grill or bake the chicken for about 6-7 minutes on each side until fully cooked and juicy.

Mango Salsa

  • In a separate bowl, combine the diced mango, red onion, jalapeño (if using), cilantro, and lime juice.

Serving

  • Serve the chicken topped with the mango salsa.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or stovetop until warmed through. Can freeze grilled chicken for up to three months.
