  • 1 lb Ground chicken Lean ground chicken for a healthier option.
  • 1/2 cup Grated Parmesan cheese Adds rich flavor.
  • 1 cup Mozzarella cheese Use for the cheesy center.
  • 1/2 cup Breadcrumbs Regular or gluten-free.
  • 1 cup Marinara sauce For topping.
  • 1 large Egg Binder for the meatloaf.
  • 2 cloves Garlic, minced For flavor.
  • 1/2 medium Onion, chopped Adds moisture and flavor.
  • 1 tbsp Italian seasoning Add more for extra flavor.
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, grated Parmesan, chopped onion, minced garlic, breadcrumbs, egg, Italian seasoning, salt, and pepper. Mix until everything is well incorporated.
  • Shape the mixture into a loaf and place it in a baking dish, ensuring it’s evenly shaped.
  • Create a cavity in the center of the meatloaf, and fill it generously with mozzarella cheese.
  • Top the meatloaf with marinara sauce and sprinkle additional breadcrumbs over the top.

Baking

  • Bake for 50-60 minutes or until the internal temperature reaches 165°F (75°C).
  • Allow the meatloaf to rest for about 10 minutes before slicing and serving.

Notes

For a gluten-free option, substitute regular breadcrumbs with crushed gluten-free crackers. For added spice, include red pepper flakes in the mixture. Allow the meatloaf to rest before slicing to keep it juicy.
