Ingredients
  

Pasta and Base Ingredients

  • 8 oz Pasta (rotini or penne) Choose shapes that can hold dressing well.
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1 cup Bell peppers, diced
  • 1 small Red onion, diced
  • 1/2 cup Black olives, sliced
  • 1 cup Mozzarella cheese, cubed You can substitute with feta or a plant-based alternative for vegan options.
  • 1/2 cup Italian dressing Store-bought or homemade.
  • to taste pinch Salt and pepper

Optional Protein Additions

  • 1/2 cup Diced salami or chicken Add for extra protein.

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Once done, drain and let it cool completely.
  • In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, diced bell peppers, diced red onion, sliced black olives, and cubed mozzarella cheese.
  • Pour your Italian dressing over the salad, then toss gently to combine all the ingredients well.
  • Season with salt and pepper to taste.
  • If desired, mix in diced salami or cooked chicken at this point.
  • Chill in the refrigerator for at least 30 minutes before serving to let those flavors develop.
  • Serve cold and enjoy at gatherings or potlucks!

Notes

This pasta salad can be stored in an airtight container in the fridge for up to 3 days, and flavors improve as it sits. For serving, garnish with fresh basil or Parmesan cheese.
