Ingredients
  

For the Marinade

  • 1/4 cup olive oil
  • 1 Juice Juice of 1 lime
  • 1 Juice Juice of 1 orange
  • 1/2 cup pineapple juice Can be substituted with mango juice
  • 2 cloves garlic, minced Optional for a milder flavor profile
  • 1 tablespoon fresh cilantro, chopped
  • to taste Salt and pepper

For the Chicken

  • 4 pieces boneless, skinless chicken breasts

Instructions
 

Preparation

  • In a bowl, whisk together olive oil, lime juice, orange juice, pineapple juice, garlic, cilantro, salt, and pepper until well blended.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour (or overnight for optimal flavor).

Cooking

  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade, discarding the leftover marinade.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked and the juices run clear.
  • Let the chicken rest for a few minutes before serving to lock in the juices.

Notes

For best results, marinate the chicken overnight and consider grilling on high heat for a beautiful char. Serve with coconut rice or a mixed greens salad.
