Ingredients
  

For the Pumpkin-Spiced Granola

  • 3 1/2 cups rolled oats (gluten-free if desired)
  • 2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1/2 cup dried unsweetened cranberries
  • 1/2 cup raisins
  • 1/3 cup chopped pecans
  • 1/3 cup chopped almonds
  • 1/2 cup sugar-free maple syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup canned pumpkin
  • 1/2 cup apple sauce
  • 1/2 cup coconut flakes

For the Parfaits

  • Plain or vanilla fat-free Greek yogurt
  • Bananas or any fresh fruit of choice
  • Optional honey drizzle

Instructions
 

Make the Granola

  • Preheat the oven to 325°F and line a baking sheet with parchment paper.
  • In a large bowl, combine oats, cinnamon, nutmeg, ginger, salt, cranberries, raisins, pecans, and almonds. Stir to mix.
  • In a separate bowl, whisk together maple syrup, vanilla, canned pumpkin, and applesauce until smooth.
  • Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  • Spread the granola mixture in a thin, even layer on the baking sheet and sprinkle coconut flakes on top.
  • Bake for about 40 minutes, stirring halfway through, until golden and fragrant.
  • Remove from the oven and let cool completely before assembling parfaits.

Build the Parfaits

  • Slice one banana and set aside.
  • Add 1/2 cup Greek yogurt to the bottom of a parfait glass.
  • Top with 1/4 cup granola, then a few banana slices.
  • Add another 1/4 cup granola, followed by 1–2 tablespoons more yogurt.
  • Finish with a sprinkle of granola and additional banana slices.
  • Repeat for each parfait. Drizzle with honey if desired.

Notes

Store leftover granola in an airtight container—it stays crisp for up to two weeks. Swap bananas for berries, pears, or apples depending on the season. For extra creaminess, mix a spoonful of Greek yogurt into the granola before layering. Build jars ahead of time for a grab-and-go breakfast; add granola right before eating to keep it crunchy.
